This Week at Orchard Hotel: Flavours of Awadh

As part of the Indian Food Festival jointly organised by High Commission of India in Singapore and Orchard Hotel Singapore, guests of Orchard Café will now be able to savour authentic Awadhi cuisine through Flavours of Awadh, which is available at Orchard Café until 19 April.
Awadhi cuisine originates from the city of Lucknow, the capital state of Uttar Pradesh in Northern India, and is best known for its wide variety of both vegetarian and non-vegetarian dishes. It distinctively rich ingredients used like mutton, paneer (cheese) and spices such as cardamom and saffron.
Handpicked by the Ministry of Tourism, Government of India, Master Chefs Rubal Pupneja and Mohd Salim from the five-star Ashok Hotel in New Dehli, will be preparing the Awadhi dishes at Orchard Hotel. The two were trained in the Royal Kitchens of Lucknow, and had the honour of cooking for royalty, prime ministers and heads of state. These rich experiences translate into authentic presentations of the cuisine in Flavours of Awadh, from starters to mains and desserts.
One dish that encompasses the authentic Awadhi style is Koh-e Daliganj, a mutton delicacy cooked in onion and cashewnut gravy. Dessert lovers in the mood for a generous helping of sweetness with a tinge of spice should try Kesar Phirnee, which is made by cooking grounded rice in sweetened reduced milk flavoured with saffron.
Diners will also have an exclusive opportunity to win two return air tickets to New Dehli including a 3-day, 2-night stay. Flavours of Awadh is available at Orchard Café (dinner buffet only) from 10 to 19 April 2015, at $68 for adults and $38 for children.
