Do.Main's Announces New Savoury Menu

Following its official opening in December 2014, Singapore-based French bakery Do.Main recently released a new menu featuring savoury home style French classics. The dishes were created by its Chef-owner Frederic Deshayes along with fellow chefs, Patrick Heuberger and Stephane Istel – from Le Bistrot du Sommelier and Bar-Roque Bar & Grill respectively.
Inspired by traditional French cooking techniques, the menu focuses on hearty, oven-baked meals that complement the bakery’s diverse bread selection.
For instance, the Cassolette of Bourguignon Snails, Tomato Fondue and Toasted Bread, ($16) is presented on a bed of tomato confit and topped with homemade garlic butter, which doubles as the perfect dip for the mix of breads it is served with. Bread has also been used to add depth to traditional recipes; Do.Main’s Croque Monsieur with Sunflower Seeds and Mustard ($8) is made with multigrain bread for added flavour, and layered with béchamel, Emmental cheese, as well as Kurobuta ham. Those searching for piping-hot French comfort food would do well to tuck into the hearty Tartiflette ($16) – a melt-in-your-mouth mix of Reblochon cheese, bacon, confit onions and buttery-smooth Ratte potatoes.
“We are firstly a boulangerie (bakery), and the oven is the heart of Do.Main. So it is apt that all the savoury dishes are also cooked in the oven. For each dish, we also thought through how the different types of bread we serve up can enhance the dining experience,” explains Chef Frederic.
On the cold dish menu is the Charcuterie Platter ($20) of duck & pistachio pate, rabbit rilette and Kurobuta ham with assorted artisanal breads, which makes an ideal companion to the specially-sourced wines available at Do.Main by the glass; as well as the Assorted Crudités Salad ($18) featuring an arrangement of sliced carrots, lentils and bell peppers.
Do.Main’s concept combines the best of the French boulangerie and patisserie with quality ingredients from France. In French, ‘Do’ refers to ‘dough’ while ‘Main’ refers to ‘hand’: the two essential tools for making French breads and pastries. In addition to its savoury menu, Do.Main offers a range of baked goods from baguettes to dessert pastries.
